Venturing beyond the coastal embrace of Schull, Rob explored the realms of art in Dublin, studying model making and special effects for television and film. However, the call of his family's culinary heritage proved irresistible. At the age of 30, he made a daring leap into the food arena, eschewing traditional catering college for hands-on experience in elite kitchens worldwide.
Returning to West Cork's abundant larder, Rob realized his dream with the opening of Chestnut Restaurant* in Ballydehob, a Michelin-star gem that echoes his culinary philosophy. Rooted in simplicity, Rob's approach values humble ingredients over extravagance, a sentiment instilled by his father, Frank, the guiding force behind his journey into the art of charcuterie.
Rob's path led him across the globe, working alongside culinary luminaries such as Richard Corrigan in London and Alice Waters in San Francisco. His culinary philosophy was profoundly shaped by the ethos of Chez Panisse, where he imbibed the importance of letting produce speak for itself.
