Ricardo began his career in restaurants such as Boragó and as head chef of the 99 restaurant in Santiago de Chile. After living a few years in NYC, going through different kitchens including Cosme and Wildair, he moved to Paris to work in kitchens such as Le Clown Bar and Fulgurances.
He was chosen as Best New Chef 2020 by Food & Wine, and also as one of the most recognized pandemic projects of the year, by San Pellegrino World's 50 Best Restaurants.
